Using our unique blend of herbs and spices we cure duck breasts with juniper, thyme, bay and port. The duck is first cold smoked and then hot smoked over traditional oak woods resulting in a soft-textured, succulent and delicious meat that is sliced and ready to serve. Use it in a salad or on a cold meat platter (see our other smoked meats like venison, beef and chicken), or serve with an old fashioned quince cheese, or fig relish.
